Betty Crocker eat your heart out, Duncan Hynes, step aside, we’ve got a true winner with XO Baking Co. Gluten-Free Chocolate Cake Mix! We’re not talking just good for gluten/dairy/peanut-free. This is just plain deadly!
The look on my babe’s face here sums it up pretty well.
So back when I figured out that this no-gluten, no-dairy, no loads of things “thang” was going to be my new way of life, for a moment, I felt sorry for myself.
I thought of all the things I’d miss out on. Most depressingly, was chocolate cake! Not just any run of the mill chocolate cake, but truly a melt in your mouth, make your heart sing kinda chocolate cake. You know, the put-your-turkey-pants-on-cause-you-just-can’t-stop-yourself kind.
I’d tried some pretty bad gluten-free food before, so I thought there was no chance in hell I’d find something to satisfy my deepest darkest craving.
Until one day the skies opened up, my stars aligned, and Baking Co Xo products appeared on my path.
You have to understand, the odds of this happening in my small town are virtually none! There is literally only handfuls of gluten-free, dairy-free products available here spread out over 3 small grocery stores. This was obviously destined to be!
So like any satisfied customer would, I immediately went back and bought the whole lot and then proceeded to hit up Amazon.ca and Well.ca for their cookie mix, cake mix, flour,… Everything! I wanted to try out the whole kit and caboodle.
Admittedly, I’m a little bit of a snood when it comes to pre-packaged foods. I’m usually a make-things-from-scratch kinda gal. This cake is an exception!
Seriously, I haven’t made my own chocolate cake from scratch since going “everything-free” because it’s just that good. Now, even if I could go back to regular box mix chocolate cake, I’d stick with XO Baking Co. Gluten-free Chocolate Cake Mix.
It’s not only delicious, gluten-free and way better than your average box mix, it’s also free of weird preservatives, artificial color and flavor too! It’s even rice-free, soy-free and kosher. Win, win! And because it’s peanut-free too, it’s THE perfect birthday party cake that can be whipped up in a breeze.
This cake is parent and kid approved!
Made as per directions, this cake’s amazing!
With these few added touches, it’s over the top deliciousness:
- For an extra-decadent cake, add 3 tbsp. of cocoa powder to the dry mixture before mixing and stir in 2 tbsp. of softened vegan butter or dairy-free margarine into the mixture before baking.
- Replace the milk with your preferred dairy-free substitute (I use Coconut Dream Unsweetened Coconut Milk).
- Swap out the 3/4 cup hot water for brewed coffee.
- Add 1 tsp. of pure vanilla with the wet ingredients.
If you think my raving sounds a little dramatic or a little over-the-top, just try it!
You’ll just wanna skip dinner and go right to dessert.

I have tried other gluten- free cakes and there is nothing that tops these . They are so moist and rich, they make being gluten – free easy . Your cooking tips make another great difference . With desserts like this I can eat healthy and still satisfy my need for desserts. Thanks Becca.
