Mmmm Fresh Breaddddd!
This bread is gluten-free, grain-free, dairy-free, yeast-free and flavor-filled! It’s hands down THE best paleo bread I’ve ever had! The smell of it baking is reminiscent of the homemade bread grandma used to make. And you know grandma always did it best!
Fresh out oven with a little vegan butter and homemade jam, it’s all the comfort you could ever dream of with health benefits to boot. It freezes like a dream and toasts to perfection.
I came across this Almond Chia Bread recipe a few years back and it was game-changing. It’s really difficult to find a really good bread recipe that’s both grain-free and yeast-free.
This recipe is from Food for Every Body and as is, is sooo good that I hardly made any changes. The only thing I did change is doubling the amount of water to mix the chia seeds with. I find this allows the seeds to swell better. And that’s it!
Though this isn’t a Becca original or even a modified-by-me recipe, I really wanted to share it with you because it is one of my go-to’s.
I always make enough for two loaves. When they’re out of the oven and cooled, I slice the bread thinly and put them in ziploc bags in the freezer. It can keep for a long time like this. You can pop them in the toaster whenever needed.
I love this bread for toast in the morning. It’s also amazing with spinach dip or garlic and herb cream cheese topped with smoked salmon. Just cut the bread in bite size pieces, drizzle with olive oil and toast in the oven at 350 F degrees until golden and crisp.
Note: If you want to bake this in a standard bread pan, you really need to double the recipe. I generally quadruple the recipe and make two loaves. I’ve put the amounts needed below to make 2 standard loaves (4x the recipe) and added the extra water too.
